We brew our beer based on the German purity laws of 1516, also known as the Reinheitsgebot. This permits us to brew using only hops, malt, water, and yeast.

Malt to Mushrooms

Locally produced in Slidell, our mushrooms are grown using an innovative system that starts with byproduct from our spent brewer grain for production.


You can find these mushrooms in the Wild Mushroom Pasta and Spinach and Wild Mushroom Bread Pudding dishes on the menu.

From the Kitchen


Bread Pudding



4 cups of stale bread

2 cups of milk

2 tsp of vanilla

1 tsp cinnamon

5 large eggs

2 cups of sugar

¼ cup of melted butter


Cooking instructions


Preheat oven to 325 degrees.

Mix the eggs, vanilla, milk, cinnamon and sugar in a large container well, then add the bread.

In a 9x11” pan, coat bottom and sides evenly with butter.

Add bread pudding mixture to pan.

Bake 1 ½ hours.


Ingredients for icing


8 oz. of confectioners’ sugar

¼ tsp of vanilla

½ - 1 TBS of milk

Our Brewmaster, Wolfram Koehler, presents a featured beer each month along with our regular handcrafted beers brewed in-house. This month’s seasonal is a Weiss Bock. February is an Imperial Pilsner, and March is an Alt. Ask your server for this month’s special!

Host your guests at the French Quarter’s OLDEST and ONLY microbrewery. Corporate parties, rehearsal dinners and other special occasions- we do it all. We accommodate groups from 20 to 1000 in our unique spaces and even the entire house! LIVE JAZZ nightly beginning at 6pm.
